The data is being logged though and stored for X amount of time according your company's data retention policies. No, an actual human is not sitting at a desk reading your VPN internet traffic unless you've done something so obviously against business policy that management is looking for a reason to fire you.

If it's an installer client like GlobalProtect, it has the ability to check for certain pre-reqs on your system to process conditional access policies through the firewall (OS type/version, patch levels, browser type, Business app version, etc. It depends on how your VPN client is configured. They cannot read actual encrypted data streams inside the tunnel of course unless you're connecting to non-encrypted intranet sites from your Mac over the VPN (Or. RDP itself does not expose anything beyond the computer name/remote address/username, but if you're connected to the VPN the network team can see all traffic that passes through the encrypted tunnel and into the Intranet.
